Aji verde sauce is a bold and bright Peruvian green sauce. It’s spicy and tangy, and packed with fresh flavor. If you are a fan of Peruvian food, you know how essential this sauce is. It pairs well with so many foods, especially ceviche and empanadas. I tried my best to make the most authentic sauce that doesn't lack on bold, fresh flavor. I hope you guys enjoy!

Ají Verde Sauce
Recipe
Ingredients:

½ cup mayonnaise

1/2 red onion

1 tsp yellow mustard
-
2 cups lightly packed fresh cilantro

2 medium jalapeños
-
4 cloves garlic, roughly chopped

2 green onions
-
1 tbs aji amarillo paste

1/3 cup (1 ounce) grated Cotija or Parmesan cheese

1 whole lime, juiced

¼ teaspoon sea salt
Instructions:

Roughly chop half of a red onion and sautée on medium heat until softened.

Once cooled, add the cooked red onion, lime juice, olive oil, cheese, mayonnaise, jalapeño peppers, cilantro, garlic, green onions, aji amarillo, and salt to the blender. Blend for about 1 to 2 minutes, until very smooth.

Give it a taste and adjust the salt according to your liking. Store in an air tight jar or squeeze bottle. Lasts up to a week in the fridge.
