Kelp noodles are a great substitute for pasta They are free of fat, gluten and cholesterol free, while still being rich in calcium, iron and Vitamin K. Recipe

Ingredients: 

 

KELP NOODLES

1⁄2 bag kelp noodles

1 tsp baking soda

1 tsp lemon juice

1 tbs soy sauce or tamari

1 tbs olive oil

1 tbs agave nectar

BLACK PEPPER CREAM

1 cup cashews, soaked 

3⁄4 cup filtered water

4-6 garlic cloves

1⁄2 tbs black peppercorns

1⁄4 cup lemon juice

1 tbs nutritional yeast

1 tsp sea salt

2 tbs chopped cilantro

*You can sub cashew, water, lemon and nutritional yeast with your favorite alfredo or cream sauce.

Instructions

 

  1. Thoroughly rinse kelp noodles and place into a large bowl. Add warm water and baking soda. Soak for 15 minutes. Drain and rinse well.

  2. Combine lemon juice, soy sauce, oil, and agave nectar into noodles and stir. Allow to marinate for at least 1 hour or as long as overnight.

  3. Using a high-speed blender, blend all remaining ingredients except cilantro until smooth. Taste and adjust flavor, if needed.

  4. Toss kelp noodles, with the pepper cream, and chopped cilantro. Serve warm or cold.
