Coquito, a beloved Latin Caribbean libation traditionally enjoyed during the holiday season, bears a striking resemblance to coconut eggnog. Inspired by the rich flavors of this iconic beverage, I embarked on a quest to craft a dairy-free rendition. In my pursuit, I uncovered a solution at reputable health food establishments, such as Whole Foods, where I encountered coconut evaporated milk and coconut condensed milk – the quintessential ingredients used in the classic concoction. By seamlessly substituting these dairy counterparts with their vegan coconut alternatives, I managed to replicate the authentic coquito experience with astonishing fidelity.

I proudly christened my dairy-free creation "The Coqui," a homage to the melodious chorus of singing frogs unique to our cherished island. With "The Coqui," I invite you to savor the warmth of holiday comforts and immerse yourself in the vibrant tapestry of Caribbean culture – all without a trace of guilt. Indulge in this guilt-free fusion of old and new in the comfort of your home.

Recipe

Ingredients 

Yield: 1 drink

  • 2 oz spiced or gold rum

  • 1 oz coconut cream

  • 3/4 oz coconut condensed milk

  • 1 oz evaporated coconut milk

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1 tbs toasted coconut flakes to rim glass

 

Instructions

 

  • Toast 1 tablespoon of coconut flakes 

  • Fill shaker with all ingredients 

  • Add ice to shaker and shake vigorously

  • Rim martini glass with coconut condensed milk so the toasted coconut flakes can adhere to glass

  • Double strain cocktail into pre-rimmed martini glass

  • Garnish with sprinkled cinnamon and more coconut flakes and enjoy!
