Carne Guisada is a traditional Latin Caribbean dish! It's our version of beef stew. So many different flavors combine to make this comforting stew that pairs perfect over rice. Trying to figure out how to make this dish vegan, was pretty tough. Its hard to come across vegan stewed meat chunks. One day as I was strolling down the aisles of a Los Angeles supermarket, I came across a pack of Gardein Beefless Tips. I couldn't believe my discovery. I bought two packs in hopes it would taste like the real thing. With all the ingredients and seasonings combined, this was the perfect alternative for my carne guisada craving! So glad I can share this recipe with you all.

Vegan Carne Guisada

Vegan Carne Guisado: 

 

Ingredients

  • 2 Packages Gardein Beefless Tips

  • 2 tbs olive oil

  • 1 8 oz can tomato sauce

  • 3 large potatoes diced

  • 1 cup of carrots

  • 1 packet Sazon Goya con culantro y achiote

  • 2 Bay leaves

  • 4 Garlic cloves, minced

  • 1 medium onion, cut into eigths

  • 1 Handful of fresh cilantro

  • 1/4 cup olives 

  • 4 tablespoons of sofrito

  • 1 teaspoon cumin

  • 1 teaspoon oregano

  • Adobo (to taste)

 

Instructions

 

  1. In a large pot or dutch oven heat 2 tablespoons of olive oil at medium high heat.

  2. Place the defrosted Gardein tips in a large bowl and season with adobo (to taste), cumin, and oregano.

  3. Sprinkle about 2 tablespoons of flour and mix around. The flour will help bind the seasonings to the tips and will help thicken the stew.

  4. Brown and sear the beefless tips and set aside.

  5. Place sofrito, onions, garlic, and cilantro in the pot and cook for a few minutes. 

  6. Add the bay leaves, olives, the Sazon packet and tomato sauce and cook for 2 minutes.

  7. Add the beefless tips, carrots and 3-4 cups of water, enough to cover the meat in the pot.

  8. Let the stew come up to a boil, then reduce the heat to medium low, cover and cook for 5 minutes.

  9. After 5 minutes, add the potatoes and continue cooking at medium low for 30 minutes or until tender.

  10. Serve the carne guisada with rice of your choice.
