I never grew up eating chicken salad. I would say I started loving chicken salad sandwiches when I moved to California. I loved the fresh savoriness of the salad. I usually pair it with some kind of sweet bread such as fruit and nut, sweet prairie, or even cinnamon raisin. I am a sucker for sweet and savory. In this vegan version of the chicken salad, chickpeas are the star. This bean is packed with protein and fiber to help you stay full longer. It also has the perfect "chew" to mimic chicken. A protein with health benefits, and easy on your pocket? You can't go wrong. You can also add curry powder to this recipe to make it a curry chicken salad. I add hemp seeds, giving the dish some more protein and beneficial omega fatty acids. Combined with everything bagel seasoning, currants, dried cherries, grapes, and cilantro makes this a truly unique salad that does wonders on the body and palette. Enjoy!

Vegan Chickpea "Chicken" Salad

Recipe
Ingredients:
Serves 4

1 can organic garbanzo beans

1/4 cup veganaise

1 tbs stone ground mustard
-
1 tbs hemp seeds
-
2 celery ribs, chopped
-
1/2 small yellow onion, diced
-
2 green onions, chopped
-
1/2 cup red grapes, halved
-
1/4 cup dried cherries
-
1/4 cup dried currants
-
1 tsp everything bagel seasoning
-
1 tsp celery seed
-
1 tbs garlic powder
-
1/4 cup cilantro, chopped

salt and pepper to liking
Instructions

In a large bowl, mash chickpeas with a fork. Do not mash all of them for good texture.

Add all ingredients to bowl and mix well until combined
-
Serve with lettuce or spinach on your favorite bread.
